Power Burritos<br />
<br />
2-3 medium sweet potatoes, peeled and cubed<br />
8-10 mini sweet peppers, diced<br />
1 medium onion, diced<br />
1 tbsp olive or coconut oil<br />
1 tsp cumin<br />
1 tsp chili powder<br />
<br />
Mix diced veggies together and toss with oil and spices. Spread flat on baking sheet & roast at 425 degrees for 20 mins.<br />

While that is cooking, combine the following in a large mixing bowl:<br />
1 large can black beans, drained and rinsed<br />
1.5-2 cups cooked quinoa<br />
1 small jar of jalapenos or 1 small can green chilies<br />
½ cup chopped cilantro (or a tad less)<br />
<br />
<br />
When sweet potato mixture is done roasting, toss with the black bean and quinoa mix. This is the filling for your burritos! Pack it into your tortilla of choice and top with a mixture of plain greek yogurt and salsa and enjoy.<br />
<br />
This recipe makes a large lot which freezes well. You can also add cheese to the burritos, wrap them up, and bake them in a 9x13 pan for a few minutes. <br />

Thank GOD February is over. It was just cold. Now that we are having our very last snow storm of the season (I'm positive), I'm just about to get really motivated to run outside again. 2 Weeks until the 8k Chicago St. Paddy's day run. <br />

Last week:<br />

Monday: Body Pump, instructor was sick, and they couldnt find a replacement in time so I had to lift weights by myself in the gym. I saw another girl that usually goes to class and we just looked at each other confused like "what do we do?". I did a few arm machines, ran 3 mi on treadmill then went home and cried. <br />
Tuesday: Bum<br />
Wednesday: Body Pump, instructor was still sick (flu I heard) but there was a sub instructor so we had class. <br />
Thursday: Bum<br />
Friday: Was SUPPOSED to go to CYC (spin) class, thought it was at 6:30, it was at 5:30. Idiot. Went to the Y and ran 3 sad miles.<br />
Saturday: I got up early and made it to body pump at 8:30, the class was the most full it's ever been for me. They ran out of the normal weights so some of us had to use the 'old' weights. 1st world problems. <br />
All day Sunday I recovered on the couch from the night before. Saturday night involved a lot of beer, bowling, and getting boo'd off the Kareoke stage. Hilarious. Even if you reeeeeallly like Nelly's "Country Grammer" and think you can rap, you can't. <br />

I usually lose them or forget to bring them with me and end up remembering what I needed to do anyways. I make fun of myself for sticking post it notes to my phone when I have an actual app for notes. Last night my pin number randomly got declined at Costco. Not my debit card; my pin number. Couldn't even use the ATM. I've been using the same pin number for years and all of the sudden I forgot it about a week ago. And it seems the more you try to remember something you should know, the less chance you have of actually remembering. I had since remembered and had been using it with no problem. I wonder if these cashiers think I'm trying to use a stolen card haha. So I had to call Allan, and he came to my rescue and bought the $87 worth of food. <br />

For a while I wouldnt throw away my calender/planners because I liked looking back to see what I had planned on a specific day, and all my little scribbles and notes throughout the year. I'm nostalgic I guess. Or a horder.<br />

Currently Eating: Salad, with tomatoes, (I've become a tomato person in the last month. Came out of nowhere) chick peas, red peppers, croutons, avacado and ranch dressing. Cauliflower with sundried tomato and basil hummus. Applesauce/oatmeal/banana/dried cranberry cookies thanks to pinterest.<br />

Tonights workout: Body pump at the YMCA, but not before actually running more than 5 minues on the treadmill. I need to do a good 7 miles or something. Purge some toxins. I should go to hot yoga soon. I feel bad because I've missed one 5 mile and one 7 mile run on my Runkeeper training program. <br />

Since the last time I blogged- I ran outside last friday in 20 degree temps and my phone froze with 1 mile left of my 5 mile run. Still felt great, but was freezing the rest of the night and my hands even went numb after my shower. Must be my old age that's affecting my circulation. <br />

Didn't do much else as far as workouts over the weekend- just a yoga podcast at home on sunday afternoon after I realized the YMCA closes at 6 (or was it 7?) sundays. Monday I went to my Body pump class and used a little less weight for the back track. My back has actually never been so sore from a workout. Odd how that worked. I think I was using too heavy of weight before and couldn't properly do the moves. <br />

Large plate =5KG = 11 lbs<br />
Medium plate =2.5KG = 5.5 lbs<br />
Small plate =1KG = 2.2 lbs<br />

They have grueling 45 min classes, and what's awesome is that you're basically in the dark. They turn the lights off in the room, blast the music, and have a spotlight on the instructor in the front. I absolutley love that they spin to the beat. Makes you really push yourself to keep up. Mondays class was a special class because it was Beyonce themed. 'Like omg'. The creator of CYC fitness even came all the way from New York (or Texas IDK) to teach the class. His name is Keoni Hudoba and he's amazeballs. Just in time for spring training motivation: King Beyonce comes out and kills the superbowl halftime show last Sunday. My YMCA recently got treadmills with fancy personal tv screens on each one, and that are compatible with iPhones so last night I scanned the Internet for ways to download videos to my iPhone to watch while I run. I absolutely love watching Beyonces live performances and what better way to find motivation during a boring treadmill run than to watch bey bey own the stage... <br />

</div>At first I tried downloading her performances from whatever google search came up first (shady, I know, and not very safe) but the files were not compatible with iTunes and it was difficult to convert them (as in the "converter software" literally shut off my laptop and deleted my iTunes) So I searched for ways to download videos directly from YouTube and found this: if you download the "Opera" web browser and install the YouTube add-on it adds a download button to every YouTube video... So voila- in no time at all I was sprinting (ok jogging) on the treadmill to Bey's 14 min halftime performance , Run the World Billboard performance, Freakum dress, Upgrade You, and Ring the Alarm MTV performances. Take THAT HGTV. <br />

I ended up running 5 miles in just over 53 minutes and my average pace was 5.9 mph which comes out to about 10 min miles but that included my 3 min warm up and cool down. Not bad. I wish the workout summary would break up the workout by miles..pff. At my 3rd mile in I get a text on my phone from a friend that lives in Chicago, reading "Beyonce, July 17th, concert tickets, $85, you in?". My heart exploded! I saw her in concert a few years ago in Chicago with the same friend so I know it will be a blast.. If I don't get sick and have to hang my head out the limo window the whole way home...<br />

In other news, my other friend and I just decided to run the Rock'n'Roll half marathon in San Diego on June 2nd, so it's actually time to start training for real. I prefer running outside and actually prefer cold temp runs here in the chilly Midwest but it's been snowing nonstop and the sidewalks are too slippery. I usually run with the ismoothrun app on my iPhone to track time/distance but it doesn't work that well on the treadmill. I usually just manually input my treadmill runs. I also have the runkeeper app and noticed that they now have training plans built into the app which is awesome. My 1st half marathon was last year in Madison, and my time was 2 hours 5 min, BUT it was sooo hot out (high of 93 degrees and they even cancelled the full marathon) so I like to think I would have been faster had it not been close to 100 degrees out haha. So for the half in San Diego I think I want to aim for under 2 hours. Whats the weather like in SD in June?! ah... So, here's my training plan via runkeeper: <br />

Because it's cold outside 2. Donald Driver was performing on Dancing with the Stars and I had to watch/drool on the tv's there (I voted a total of <u>48 times</u> for him between my phone and Allans later that night, love you DD!). It's the first time I've used my iSmoothRun app to track a run indoors. It uses an 'accelerometer' and magic versus its GPS. According to my 'my coach' schedule (picture below), I was only supposed to run 4 miles easy that day. But running on a treadmill feels like 30% outdoor running effort, so really I was dragging. Fit Radio streams AWESOME music, and they mix one song into another, so there are never gaps of silence between songs like regular radio stations/playlists. My mom fell in love. She's been looking for a new puppy for a year now and hasn't been able to take the plunge. It was perfect timing, and Zeus was a great deal. I think she paid $150 for him, and he is a purebread that usually goes for $600-$1000. He will be 1 on April 15</span><span style="color: black;"><sup>th</sup><span style="font-size: small;">. Happy New Year! I just had a flashback of a dream I had last night. The statement that I typed above made me remember it "I'm waiting until someone fixes it for me". Funny how things like that work - the statement had nothing to do with the dream but it triggered something that made me remember the dream. Sorry to be such a downer! Let's move on to fun happy thoughts... Tomorrow I will be attending my coworker and close friend Lyndsay and Jon's ultrasound! They'll be finding out what type of bun is in the oven? French baugette? Wheat? Roll? Chips? Apple? <span style="font-size: x-small;">(Ok last two were a Panera joke)</span>...baby panda? Lyndsay has been wishin' and hopin' for a girl, but has a feeling it's a boy. I have a feeling its a boy, and it will have a five o'clock shadow if he resembles his dad too much! She's due in February and I cannot wait! I kind of feel pregnant myself since I see her everyday. The first month or two I would eat everything she couldn't because she was a sick girl.... So back to the past two weeks: I have <span style="font-size: large;"><i>NOT worked out</i></span> since September first! The whole Gabby thing set it off of course, but I just haven't been able to 'press play' as Tony Horton says. I switched over to doing "Insanity" workout vs P90X and saw faster results, so tonight I finally got my ars off the couch and bounced around for a while. <u>Shits hard.</u> But I feel good and less nauseous as usual... My cats taunt me still by the way. Walk past me, dangle from the tv, walk through my legs, lives in danger, lay down and roll around inches from my shoes. They think they're funny.<br />

I go back and forth because part of me sees it as documenting your life for strangers (and a few friends..) to stumble across, or check in on if they're bored lol. I almost wanted to delete my blog because I'd rather spend my life living it, not documenting it, and honestly there are 1,500 other things I should probably be doing. But then I remembered something I came across while going organizing one of my kitchen drawers last week. It was a personal daily planner from 2009. I hesitated to throw it away like all the other times I've tossed one of those books with scribbles, appointments, un-done tasks, and the occasional "florida trip!" or "no work today! Getting a tan!". I get this sentimental feeling, and while Allan will say it's a hoarder tendency (<i>love</i> that show), I like coming across something or some time I forgot. So maybe, when I'm 80 and computer screens are engraved into the backs of our eyelids I can browse through these days and smile, cry, remember, laugh, cringe, whatever. I have a really bad memory, so that's my excuse for now :)<br />

All of that brings us to here, me blogging on Sunday afternoon, and I have to confess: I skipped my Friday and Saturday P90x workouts! Yikes. And currently, I have a bajillion things to clean around my condo, including a pile of clean clothes that need to be put away. Allan brought over his chin up bar today..so... I HAVE to do my P90x and I'm gonna do both workouts I missed: Legs and Back, Ab ripper, and Kenpo X. Sorry messy condo: you'll be slaughtered tomorrow. <br />

We recently bought another company out so I'll be adding more to my workload. Just recently I added 'hand model' to my line of work, for our most recent brochure.&nbsYou'd be floored at all the theft that happens at libraries. We sell direct to Public Libraries and college libraries :) So if you're planning on stealing a DVD from a library, don't even THINK about it!<br />

I get to travel 4-6 times a year, to attend <b>LIBRARY TRADE SHOWS</b>. Now, I know what you're thinking, how CAN she party so hard? These librarians are out-of-con-trol I'm telling you. Basically, there's one thing you need to know about most librarians: They're looking for free stuff, and free stuff only. Once you start introducing your product they're outta there. Sometimes they'll even pick up props from our booth and say "is this free?". Overall, I look forward to these trips. I've been to a ton of great cities since working here. I love going to California shows the most. Only major city I haven't been yet: New York City. It's my dream to go there. I plan shopping excursions every time I travel for work too. Got this dress from Zara (we dont have Zara's in the midwest!) last month when I was in Washington DC:<br />

On a sad note, I was excited to find some boot wedges at Zara that I had been eyeing on Ebay. I bought them a size too big :X They say size 39 on the bottom. I'm a 7 so I'm guessing 39 is an 8? If anyone is interested, comment and I'd be happy to sell them. Bought them for $70 and they've never been worn!<br />

I have friday off and am going on a zip-line tour in the Dells with my bf. Read today on the news that a 12 year old girl from Florida was in the Dells this past weekend and FELL 100 feet from a free fall attraction (looks kinda like bungee jump) and the net wasn't out, so she hit concrete. SO, everytime the P90x vid did pullups I just did 10 pushups.<br />
With that said, I'm not very sore from that portion of the workout, except for my legs. We did every type of lunge, squat, and wall sit imaginable. The one that has me limping today (monday night, 2 days later, yikes) was the calf raises.<br />

Then came ab ripper, the second time i've done it and it has NOT gotten an ounce easier....<br />

So I was pooped after those two workouts, and told myself I'd do yoga SUNDAY. Sunday rolls around, and I do next on the list: Kenpo X. Now, I've been doing Tae Bo tapes/dvds for YEARS i'm telling you. I owe it all to my High School gym teacher, <b style="color: #cc0000;"><span style="font-family: Georgia,"Times New Roman",serif;">Mrs. Phillips aka Mrs. Spanton</span></b>. LOVE her. She popped in a tae bo tape once and I was in LOVE. Basketball, volleyball, and softball practices couldnt touch the muscles in my butt that Mr. Bo did... hehehe... Second best class in gym: "falling asleep techniques!" LOL, i can still remember her soothing voice and rainforest sound effects. And the smell of the stinky mats we laid on...<br />
<br />
So yeah, back on track: Kenpo X is a lot like tae bo, and for me, a little easier. I'm used to doing all the kicks and punches with bands attached to my feet, and in Kenpo X there was none of that. Still good workout though. No Yoga yet though :(<br />

So on my rest day today I thought I'd take care of some bidness so I have all week to focus on workouts. Went to Target, Walgreens and Mounds. And wandered. Just wandered. I couldnt find anything I was looking for, damn you Target. BUT the purchase that makes up for it all: kitties first catnip:<br />

He helped me with some of the moves, pushing me for more reps during the side tricep pushups. I did most of the arms with 5 and 8lb dumbells, needing probably 10 pounders for some of the moves. Thought I'd be super sore today but not so bad!! <p>Ab ripper did it's job and hopefully one day I can work myself up to more than 10 seconds of each move :/ these people are INSANE. <p>I can already feel my muscle memory kicking in. Departing from this spare tire won't be so hard after-all...<p>And Panda was the distraction this time. How nice that they can share and take turns. <br />

Last night's workout wasn't that bad. It was Cardio-x and the first half of the 45 minutes was all yoga!? But it was intense yoga. Next time I'm going to do that part with my shoes off to make it easier to stay in the poses. <br />

The second half of the workout was mostly kicking, punching, and jumping leg lifts. Definatley worked my lungs. <br />
<br />
The sorest part of my body is the sides of my abdomen and my butt/back of my thighs. I just realized that the harest workout, Kenpo X, falls on sundays for me, and monday is my relax/yoga day. But since I started on a tuesday, that's just how the schedule fell into place. <br />
<br />
Tonight is shoulders and arms, followed by <span style="color: red; font-size: x-large;"><em>ab ripper</em></span>. Ab ripper is tacked onto the end of a few workouts, but it's only 16 min long. My uncle gave me a heads up that it's brutal. <br />
<br />
I felt sick again nearing the end and had to lay down immediatley after stretching. Hopefully that goes away soon. Was supposed to go to my friends house for a bonfire and smores after my workout :( I should stop making plans for after these workouts until i'm able to function within an hour after them! When I started to feel better I made some chicken salad, from scratch, which i'm about to eat in an hour for lunch. I tasted it last night and it is AWESOME. <br />

My bf brought it over and wham - i was ready and willing. I even went to wally-world to pick up a set of 5 and 8 pound weights, and a yoga mat. On the way to the store, I wasn't even discouraged when I realized my driver's side front tire was almost flat while waiting for a train to pass the intersection I was 25 cars away from. Pat on back. <br />

Looking at everything included in the p90x 'kit' was a little overwhelming, but being as anal as I am, I had researched many blogs and websites before taking my first look at the actual system. I had found the worksheet printouts, which my bf also printed out (IN COLOR, he loves me), and started there. There's multiple versions of P90x, such as Classic, Classic +, Lean, Lean +, X+Doubles, Double P90x, and while these titles look a little like something out of 8th grade math, they're actually different variations of workouts, in specific weekly schedules, each aiming at different goals for different bodytypes. I'm doing the 'Lean' version, to slim down and tone up my muscles - if they're still willing to do such a thing.<br />

SO, drumroll: <strong>DAY 1</strong><br />

Yes I took <em>before</em> pictures and <strong>no</strong> i won't post them....Yet. I'm 5'4" and curvy. Not chubby curvy, but curvy. I weigh anywhere between 145-148 depending on the time of month. I like my body, but just want to feel more comfortable in my clothes. My goal is to get back into a pair of Juicy jeans I wore 4 years ago. I believe they're size 27. I'll take a picture for my next blog :) Maybe I'll even include a shot of the PILES of jeans that I don't fit in :( Oh yeah, and my bf's body is in immaculate condition. Keep in mind his metabolism is lightyears away from mine, and his body oozes muscles even if he misses a whole month of workouts. People mistake him for the Hulk when he wears green... But now he works out almost daily. He also plays football. So imagine being around that every day... <br />
<br />
Physical activities from my past: Tae bo (love it), running (i'll go about 3-4 miles a pop), volleyball, basketball, softball (yes it was YEARS ago but I played in H.S.)<br />

The first workout on my P90x extravaganza was Core Syntergistics. I was wrong to assume it would be all crunches from the floor. The only time we were touching the floor with anything but our feet was when we were doing planks, various forms of planks, or 'banana' rolls. I hate bananas now. You start on your back and roll to your side, withOUT using your hands or feet, and hold the position before rolling back. My good friend Sarah introduced me to these a while back when I did some circuit training with her. It's easier on carpet :/<br />

I felt good througout the beginning of the workout, and actually laughed 'out loud' at some of the trainer's jokes. He's random. Glad he wasn't blandly repeating "focus on your core, breathe, don't give up, you can do it". And extra bonus that they don't COUNT every SINGLE rep. That bugs me. Only gripe is that the clock countdown is shown on the screen. My cats were a good enough distraction from that though, thankfully. They're gonna get smooshed sometime soon, I can feel it... Oh and the blonde chick is a showoff. Annoying. <br />

I do need to get a larger yoga mat/workout mat, I have wood floors and when doing the banana rolls I went onto the wood, slathering it with my sweat, and sliding into a more slanted 'roll'. I used my 5lb dumbbells for the few excersizes that incorporated weights. And apparently there are no worksheets for this workout, so I jotted down the reps that I did, and the weight, on a few of the moves. I made my own worksheet in excel today so I'll be documenting that next time. I'm turning into my Dad: I'm starting to use excel spreadsheets for everything! "Analytical analyzer". <br />

Close to the end of last nights workout I got that nauseous feeling and started to sit down between moves. Sweat was pouring. After the workout was done i laid there, trying not to heave. Bf called while I was regaining my composure, and I think i played it off well... <br />
<br />
How I feel today: Really good. I'm not painfully sore, but I can feel where the workout targeted: my sides, arms, butt, and tummy = CORE. I also only gave about 65% during this workout because I didn't want to be worn out for tomorrow's next doozer: Cardio. I also at e a little more than usual today. A couple weeks ago I started really cutting back on my carbs, losing about 4 lbs in the first 2 weeks. I slipped up a few times but I think after getting back on that strict diet, and combining the P90x, that extra 15lbs will start melting off. And then... HELLO SWIMSUIT MODEL PLAYBOY BUNNY MAXIM HOTTIE..<br />

OH, and how ironic: I show up to work today to find out that my uncle who also works with me, started P90x last night too! He's doing the 'classic version' so we won't be on the same workout schedule. He wants to be all bulky and buff. But <strike>great</strike>, now I really gotta stay on track. He ran a marathon a little while back. He'd come into work at 8am talking about that morning's 5 mile run, and I'd be shoving bagels and donuts in my mouth.<br />
